I adore curry, all the complexities of tastes and strengths, I could eat it nearly every day quite happily. There are some curries that take a whole shopping list of ingredients and you need the time to commit to them, but sometimes, when the need for a curry hits, you want something that’s really easy to throw together. This lovely easy vegan Thai yellow curry is just so satisfying and won’t keep you slaving in the kitchen.

Recipe for easy vegan Thai yellow curry – Ingredients

  • mixed veggies – {we used} 8 small baby potatoes halved, 100g of sugar snap peas trimmed and cut in half, 100g of green beans trimmed and cut in half, 1 large carrot chopped, 1 large onion chopped, 1/2 head broccoli in pieces
  • lime
  • 1 green or red chillies
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric
  • 1 tablespoon curry powder
  • 1 vegetable stock cube
  • 1 can coconut milk

Par boil your potatoes, carrots and broccoli.

In a large pan add the coconut milk, stock cube, soy sauce and one and refill the coconut can with water to add in, stirring well. Allow this to come to a slow simmer.

Gently fry the ginger, garlic, chilli and onions together until lightly browned.

Add the turmeric, cumin seeds, curry powder and stir through.

Add the par-boiled vegetables and any vegetables not yet cooked and stir to mix through.

Add the broth of coconut milk, stock cube and soy sauce to the vegetable, spice mix and gently heat through on a low-medium heat, stirring occasionally.

Add a squeeze of fresh lime and serve in bowls with fluffy white rice on the side and chunks of naan bread to dip in.
