We love our spicy food and eat tacos and wraps regularly – they make such great veggie and vegan meals. This recipe for potato tacos in a spicy chipotle sauce is so good. It’s got a real hit of fire from the chipotle mayo, then the crunchy potatoes and crisp lettuce all comes together in the most delicious of wraps. We had a version of this on our road trip through Florida and Georgia and had to recreate it at home to keep enjoying while here in the UK. We have made this version vegan.
Recipe for potato tacos in a spicy chipotle sauce – Ingredients
- 2 large potatoes – cleaned and squared into 1cm squares
- 2 heaped tablespoon of cornflour
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 teaspoon chilli powder
- lettuce shredded
- 30 grams vegan mayonnaise
- 1 heaped teaspoon of chipotle paste
- olive oil
- 8 small soft wraps or hard tacos
This makes enough for 2-3 people or more if served with some sides of a spicy Mexican rice, guacamole and chips.
Recipe for potato tacos in a spicy chipotle sauce – What to do
Pre-heat the oven to 180.
Cover the cubed potatoes with 2 tablespoons of olive oil, making sure to stir them well to coat them in olive oil.
Mix together the cornflour and the onion powder, garlic powder, chilli powder and paprika.
Add the spice mix into the bowl of potatoes, making sure they are thoroughly coated.
Spread olive oil on some baking paper and place this into an oven dish or baking tray.
Spread the potatoes out onto the baking paper.
Place baking tray in oven for 20 minutes, turn the potatoes after 10 minutes.
Add your chipotle paste to some vegan mayo and stir well.
Warm through your wraps.
Share out the potato into your wraps, drizzle over a generous helping of chipotle mayo, top with shredded lettuce and enjoy.
