It’s always nice to have a sweet treat at any time of the year but a vegan chocolate salami makes a wonderful gift at Christmas in particular. I love this recipe which we have created with our favourite elements. Sweet cherries, rich chocolate, crunchy biscuit and some pistachios for a nutty bite. There’s nothing better than a slice of this vegan chocolate salami with a mid-afternoon cup of tea or a gift when visiting friends. We love it after a Sunday afternoon walk at any time of the year.
A taste of our travels – vegan chocolate salami – Ingredients

- 200g dark cooking chocolate, broken into pieces
- 125g unsalted vegan butter
- 40g pistachios, roughly chopped
- 100g glace cherries
- 6 digestive biscuits, roughly crushed
- 1½ tbsp icing sugar
What to do
1. Melt 200g of dark chocolate with 125g vegan butter in a heatproof bowl over a pan of boiling water.

2. Keep stirring as it melts, then set to one side and leave to cool (allow 30 mins).
3. Crush 6 digestives into pieces with a rolling pin, lightly crushed as you don’t want the pieces to be too small, and add to the cooling chocolate.
4. Add 100g glace cherries to the chocolate mix, then using a rolling pin crush 40g pistachios and add to the cooling chocolate.

5. Stir until all the items are completely covered with chocolate.
6. When the mix is completely cooled, spread out a piece of silver foil or clingfilm and spoon the mixture on to it and tightly wrap in to a large sausage shape. Gently roll backwards and forwards to smooth it all out and tie off at both ends.

7. Chill in the fridge overnight.
8. When you’re ready to serve, remove the silver foil or clingfilm, dust with icing sugar and cut in to slices.

9. What I love about this recipe is you can keep it for up to a month in the fridge, although I’ve never been able to keep one for that long! Bring it out about 20 minutes before you want to serve it.

I have never heard of Vegan Chocolate Salami but it looks so clever, creative and definitely delicious. Especially the pistachios, which are my favourite.
Ohh now this sounds amazing, I love the idea of bringing something from your travels back to you in this way a way to keep on reliving those memories.

We have a very similar recipe in portugal but it does not include pistachios or cherries! For that reason I find this one to be quite interesting and i should try to make it thanks for sharing
