- 150g unsalted vegan butter, cold and cubed, plus extra for greasing
- 200g plain flour
- 75g golden caster sugar
- 100g pecans

- 1 x 397g tin vegan caramel (e.g. Nature’s Charm or homemade)
- ½ tsp sea salt flakes
For the chocolate topping
- 300g dark chocolate (minimum 54% cocoa), chopped
- 25g unsalted vegan butter
What to do to make our vegan pecan millionaire’s shortbread
1. Prepare the tin and toast the nuts
Preheat the oven to 180°C (fan) / gas mark 4. Grease a 20cm square tin and line with baking paper.
Spread the pecans on a tray and roast for 10–12 minutes until fragrant. Let cool. Set aside 16 whole pecans for topping, then finely chop the rest.
2. Make the shortbread base
In a large bowl, mix the flour, sugar and a pinch of salt. Rub in the vegan butter with your fingertips until the mixture resembles coarse breadcrumbs. Stir in the chopped pecans, then press the dough into the prepared tin in an even layer. Smooth the top.

Bake for 35–40 minutes, or until golden and lightly crisp. Set aside to cool completely in the tin.
3. Add the caramel
