We are a family that loves fruit and there are bowlfuls in the kitchen throughout the seasons. When the summer comes around we love to get in the plump apricots that feel like a bite of sunshine. It’s hard to keep the kids away from them when they come in as they devour them, loving their sticky, sweet flesh. One dish we love to make though, when we can is this apricot crumble recipe with amaretti and vanilla cream. This crumble or fresh apricot cobbler will have you dreaming of summer days in France, sat by the coast or breathing in the herb-filled heady air of Provence.

Ingredients
- 6 large apricots
- 60 grams caster sugar
- 100 grams plain white flour
- 100 grams vegan margarine
- 45 grams demerara sugar
- 80 grams vegan amaretti biscuits*
- 60 grams flaked almonds
- 250 grams of soya cream (or your vegan alternative)
- 1 tsp Vanilla essence
* We appreciate it can be difficult to get hold of vegan amaretti biscuits but we have found them in Whole Foods Store in London. One alternative is to make your own.

Apricot crumble recipe with amaretti and vanilla cream {France} – what to do:
Remove the stones of the apricots and cut into large segments (around 8 per apricot).
Preheat the oven to 180 degrees.
In a saucepan gently cook through the apricots and caster sugar, stirring regularly until the fruit completely softens.
Remove pan from heat.
With a rolling pin crush the amaretti biscuits to small, bite-size pieces.
Place the amaretti biscuits, flaked almonds, flour, margarine and demerara sugar in a bowl and mix to combine.
Pour the apricot mix into the bottom of a large flan dish.
Add the crumble topping, ensuring it covers the apricot mixture.
Bake in the oven for approximately 20 minutes until golden brown.
While the crumble is baking mix the vanilla essence in to the cream.
Remove the crumble from the oven and share into bowls.
Pour the vanilla cream over the top and enjoy.
