Sometimes I just crave spicy noodles. They are so warming in winter and comforting year round. Spicy vegan noodles are the perfect pick me up. This recipe is so simple and made with just a few staples in the cupboard. If you’re a spicy noodle fan then this recipe is for you. With a little fire but plenty of taste this is a spicy noodle recipe that really works. We either have the noodles as a side dish to a main course or as a big, steaming bowlful to enjoy with a couple of spring rolls on the side. These chilli oil noodles really hit the spot. We always love to cook up recipes from our travels. These take me back to travelling through Asia, from all the wonderful food of Malaysia to the spice of China. I can’t get enough of them.
Ingredients
Makes enough for 2 people
- 125g rice or wheat noodles
- 1 large garlic clove – crushed
- 1 tsp chilli flakes
- 1 tsp gochujang
- 1 tbsp soy sauce
- 1/2 tsp rice vinegar
- 1/2 tsp sugar
- 2 onions – finely chopped
- 2 tsp olive oil or vegetable oil
- 1 tsp dark soy sauce
- Sprinkling of sesame seeds
- 2 spring onions – finely chopped
What to do to make our super easy spicy vegan noodles



- Boil water and cook noodles as per the pack instructions.
- Drain the noodles and set to one side.
- Cook the onions and garlic in a frying pan in the oil for five minutes
- Add in the chilli flakes, gochujang, both types of soy sauce, rice vinegar and sugar in with the onion and garlic and cook through for 2-3 minutes
- Add the noodles to the mix and ensure they are thoroughly coated with all the ingredients.
- Portion the noodles into a bowl and add a sprinkling of sesame seeds and garnish with the spring onions
- Enjoy
