I first fell in love with peach-based desserts while wandering local markets abroad, where perfectly ripe fruit was always the star of the show. This sweet and simple honey & peach ice cream (dairy free) is my way of recreating those memories at home.

This recipe is light, creamy and naturally sweet, combining fresh peaches with honey and almond milk for a beautifully smooth, dairy-free ice cream. Itโ€™s incredibly easy to make, uses just a handful of ingredients, and is perfect whether youโ€™re cooling down on a hot summer day or craving a taste of sunshine in the colder months.

Peaches are enjoyed all over the world, but some of my favourite versions of peach desserts have come from Mediterranean and European travels, where ripe, sun-warmed fruit is celebrated in the simplest ways. From Italian gelaterias serving delicate fruit sorbets to rustic French desserts using honey and stone fruits, this recipe draws inspiration from those beautifully uncomplicated flavours.

1kg ripe peaches (peeled and chopped)
100g sugar
40g honey (or maple syrup for a vegan version)
2 tsp vanilla extract
400ml almond milk

1. Chop the peaches and blend into a smooth purรฉe.
2. In a saucepan, gently heat the almond milk, sugar and vanilla extract over medium heat, stirring until the sugar dissolves.
3. Remove from the heat and stir in the peach purรฉe and honey.
4. Allow the mixture to cool completely.
5. Pour into an ice cream maker – we use a Sage Smart Scoop (or see our notes below, in “variations”, if you don’t have one) and churn until thick and creamy.
6. Freeze for a firmer texture if needed before serving.

โ€“ Coconut twist: use coconut milk instead of almond milk for a richer texture
โ€“ Peach & berry: add raspberries or strawberries for extra flavour
โ€“ No ice cream maker: freeze and stir every hour until smooth

Ingredients
  

  • 1 kg peaches
  • 100 grams sugar
  • 40 grams honey
  • 2 tsp vanilla extract
  • 400 ml almond milk

Method
 

  1. Chop and puree the peaches
  2. Gently heat the sugar, almond milk and vanilla extract in a saucepan on a medium heat and stir while the sugar dissolves
  3. Add the puree peaches and honey to the mixture and remove from the heat
  4. Allow to completely cool
  5. Once cooled, add the mixture to an ice cream maker and churn to a firm ice cream
