When we head off to the Alps skiing one of my favourite things to enjoy there is the food. I love all the creamy sauces and rich flavours (vegetarian tartiflette is one of our popular recipes on here so I’m thinking you all like it too). There’s nothing more comforting when the temperature dips than Alpine food. The desserts are pretty special too and my absolute favourite is German apple strudel. There’s something so warming and happy about this pastry. Our apple strudel recipe is based on all our trips to the snow. When you’re looking at apple strudel recipes it is important that key elements are included such as raisins, a liberal sprinkling of icing sugar and the right spices. Our recipe for apple strudel is based on countless trips to the Alps and trying enough slices of this delicious dessert. Best of all it’s plant-based. Ingredients

  • 220g of ready rolled filo pastry (this is normally vegan, so do check)
  • 5 large apples
  • 60g of soaked raisins
  • 1 tbsp lemon juice
  • 3 tsp ground cinnamon
  • 100g of granulated sugar
  • 1 tsp vanilla extract
  • 30g of breadcrumbs
  • 100g of vegan butter (melted)
  • 20g of icing sugar

How to make vegan apple strudel

Preheat your oven to 180 degrees c.

Peel your apples, core them and slice into thin crescent moon shapes.

In a bowl add the apple pieces, cinnamon, raisins, sugar, vanilla and the lemon juice and stir so that the apple pieces are well covered.

Lay out your filo pastry on non-stick baking paper or silver foil. Spread vegan butter on each sheet with a pastry brush, keeping some butter back for the back baking.

Once all the sheets have been buttered, spread the breadcrumbs on one half of the filo pastry, long end to long end and then spread the apple mixture on top of the breadcrumbs.

Cover the mix with the other half of the filo pastry. Tuck the edge under.

Brush the top of the pastry with the remaining vegan butter and bake in the oven for 50 minutes. Add a little more melted butter each 15 minutes.

Remove from the oven and allow to cool for ten minutes.

Dust with icing sugar and serve warm.
