I’ve been obsessed with rustic, stonebaked rolls lately, and this recipe using them, is right at the top of my list. There’s something about the combination of warm, chewy bread, tangy sauerkraut, creamy mustard sauce, and rich slices of avocado that just makes it feel like comfort food with a little twist. I’m calling this Bavarian because it has all the German elements to make it perfect for a lunch from this region. When I’m trying to work out what to have for lunch this is my go-to when I want a filling, satisfying meal that’s vegan but still indulgent. I just love this vegan Bavarian sausage and sauerkraut roll (with avocado and a creamy mustard sauce) and hope you do too.

This is my vegan take on a classic Bavarian-style sausage sandwich. Instead of traditional meat sausages, I use vegan sausages, layered with creamy mustard mayo, ripe avocado, and tangy sauerkraut in a rustic stonebaked roll. It’s hearty, flavour-packed, and perfect for lunch, dinner, or even a casual weekend picnic.

Inspired by Germany’s Bavarian street food culture, this is a plant-based homage to the traditional bratwurst roll. I’ve taken cues from street vendors in Munich, who pile their rolls high with sausages, mustard, and pickles, but made it entirely vegan and a little creamier with the addition of avocado and mustard mayo.


Expect a balance of flavours: the tangy sauerkraut cuts through the richness of the creamy mustard sauce, while the avocado adds buttery smoothness. The vegan sausages are savoury and meaty, giving you all the satisfaction of a traditional sausage roll without any of the meat. Every bite is a mix of soft bread, slightly crisp edges, and melting layers of deliciousness.

Vegan Bavarian sausage and sauerkraut roll

Serves two people

4 vegan sausages (any brand works but we particularly love the V Bites British deli, ready to eat sausages for this recipe)

2 stonebaked rolls

1 avocado, sliced

100–150 g sauerkraut

3 tbsp vegan mayonnaise

1 tbsp mustard 



  1. Make the mustard mayo: In a small bowl, mix vegan mayonnaise with your preferred mustard until smooth and creamy. Adjust the ratio to taste.
  2. Cook the sausages: Fry or bake your vegan sausages until golden brown and fully heated through. (Unless you’re using V Bites or similar which are pre-cooked). Slice each sausage lengthways in half.
  3. Prepare the rolls: Slice your stonebaked rolls open. On both sides, spread a generous layer of the mustard mayo.
  4. Assemble the rolls: Lay four sausage halves across the bottom of each roll. Top with slices of ripe avocado.
  5. Add the sauerkraut: Spoon a good helping of sauerkraut over the avocado and sausages. Close the roll and press gently. Serve immediately.

  • Add pickles or gherkins for extra tang
  • Spicy kick: mix a little sriracha or smoked paprika into the mustard mayo
  • Cheesy option: sprinkle vegan grated cheese over the sausages before adding sauerkraut
  • Roll swap: try a ciabatta, pretzel roll, or baguette for a different texture

  • Serve with crisp potato wedges or sweet potato fries
  • Pair with a light cabbage salad or pickled vegetables
  • Enjoy with a cold vegan beer or sparkling soda for a street-food vibe

  • Make sure the sausages are cooked fully and nicely browned for the best flavour
  • Use ripe avocado for creaminess, but not overripe to avoid sogginess
  • Spread the mustard mayo generously to prevent the roll from drying out
  • Drain excess liquid from the sauerkraut if it’s very wet to keep the roll from getting soggy

Can I make this ahead?
You can prep the sausages and mustard mayo ahead of time, but assemble just before serving to keep the rolls fresh.

Can I use frozen vegan sausages?
Yes, just cook according to the packet instructions and slice once cooled slightly.

Can I swap the sauerkraut?
Pickled cabbage, kimchi, or even shredded pickled carrot would work as a tangy alternative.

Can I make it spicy?
Absolutely. Add chilli flakes or a splash of hot sauce to the mustard mayo.

Ingredients
  

  • 4 vegan sausages
  • 2 stonebaked rolls
  • 1 avocado sliced
  • 100 –150 g sauerkraut
  • 3 tbsp vegan mayonnaise
  • 1 tbsp mustard

Method
 

  1. Mix mayo and mustard.

  2. Cook sausages and slice lengthways.

  3. Slice rolls and spread mustard mayo on both sides of the bread.

  5. Add avocado slices.
  6. Top with sauerkraut and close the roll.
