Italy is one of our favourite countries to visit as a family. The people are unbelievably friendly and love kids. And the climate is warm and the food is delicious, hearty and full of Mediterranean goodness. As a vegetarian, I love being able to eat well and fill up on fresh, seasonal produce. And Tuscany has to be one of our favourite regions. Packed full of beautiful sights from cultured cities like Florence and Pisa to the picturesque hilltop towns. This Tuscan mozzarella Panzanella salad will have you imagining yourself in the warm sunshine in no time.
About – Mozzarella Panzanella Salad

This is like an updated version of the traditional Caprese salad. It’s full of heart-warming, comforting ingredients.
Whether eaten on a summer’s evening or when you need a blast of sunshine in the middle of winter, it can’t fail to cheer you up.
Ingredients

- 2 red onions sliced finely
- 1 large ciabatta
- 20g fresh basil
- 60g capers
- 2tbsp dried oregano
- 60g black olives – coarsely chopped
- 500g cherry tomatoes halved
- 2tbsp dried oregano
- 3 tbsp red wine vinegar
- 2 mozzarella balls
- salt
- pepper
- 4 tbsp olive oil
- 2 tsp sugar
What to do to make Italian Mozzarella Panzanella Salad
- Boil a full kettle and preheat the grill to high.
- Tear the basil coarsely and add to the salad bowl.
- Drain the mozzarella and tear into bite sized chunks and add to the salad bowl.
- Place the sliced onion in a sieve and over a sink pour the boiling water over them.
- Place the onions in a separate bowl and add the vinegar and sugar and mix well. Leave this to soak which mellow the flavour.
- Drain the onions, discard the marinade and add them to the salad bowl.
- Tear the ciabatta into bite size pieces (approx 2cm), place on the grill tray and drizzle over the oil. Season to taste with salt and pepper. Place them under the grill for 10 mins or until crispy and brown and then add to the salad bowl.
- Mix the bowl well and season with black pepper.
- Add the tomatoes, olives, capers and oregano to the salad bowl.
- Drizzle over a little more olive oil and serve
