Vegetarian pigs in blankets toastie recipe

We love our trips to Costa Coffee and they always have such great seasonal dishes. The Costa Pigs & blankets toastie looks particular tasty. As we’re vegetarian we decided to make our own veggie version. So this is our vegetarian pigs in blankets toastie recipe. It’s packed full of flavour with vegetarian sausages and bacon, red onion chutney and a sage and onion crumb topping.

What are pigs in blankets?

Pigs in blankets, simply put, are sausages wrapped in crispy bacon. They are a much-loved part of British Christmas dinners and festive celebrations. Their history in the UK is believed to date back to the 20th century, although the exact origins of the dish remain unclear. What is certain, however, is that these savoury bites have become a staple of Christmas feasts, often served alongside the main course on the big day.

The concept of wrapping meat in another layer of meat or pastry is far older than the modern pigs in blankets. Early forms of wrapped meats were popular in medieval Europe, where they were used to preserve or enhance flavour. However, the British version, featuring small pork sausages (chipolatas) wrapped in streaky bacon, emerged as a distinctly festive food during the mid-1900s.

There are now vegetarian and vegan versions to buy so our recipe plays into this tradition.

Ingredients

  • Vegetarian sausages – 2 per sandwich
  • Vegetarian bacon – 2 rashers per sandwich
  • Sliced bread
  • Red onion marmalade
  • Mozzarella cheese (grated)
  • sprinkle of dried sage
  • sprinkle of onion granules

What to do to make our vegetarian pigs in blankets toastie recipe

  1. Cook your vegetarian sausages and vegetarian bacon as per the pack instructions.
  2. Lightly toast the bread – just for 30 seconds
  3. On one side of bread spread a layer of red onion marmalade.
  4. On top of the marmalade place three slices of vegetarian bacon.
  5. Cut two sausages in half and place evenly across the top of the bacon.
  6. sprinkle the top with mozzarella cheese.
  7. Place the top slice of bread on top. Cover with a little more cheese. Sprinkle some sage and onion granules on top of the cheese and place under the grill for a minute or two just to make sure it’s nicely toasted and the cheese bubbling.
  8. Remove, cut in half and enjoy!
