There’s something truly special about the summer months. The air is warm, the countryside is green and verdant, and the markets are overflowing with the freshest, most flavourful fruits of the season.
From juicy strawberries to plump raspberries and sweet blackberries, this time of year brings an abundance of locally-grown produce that’s simply begging to be enjoyed.
Fruit and cream dishes are a timeless combination that perfectly captures the essence of summer.
The cream’s luxurious, velvety texture balances the vibrant tartness of the fruit, creating a harmony of flavours that’s both comforting and refreshing.
Whether it’s a classic Eton Mess, a summery fruit tart, or our family favourite strawberry and cream waffles, there’s no denying the charm of this delightful duo.

Right now is the perfect time to indulge in these kinds of dishes for several reasons:
- Peak Freshness and Flavour: Strawberries, in particular, reach their peak ripeness during the summer months.
Picked at their prime, they are bursting with natural sweetness and vibrant colour.
This means that any dish you create with them will be full of the freshest, most intense flavours possible. - Supporting Local Agriculture: By focusing on locally grown fruit, you’re not just enjoying top-quality produce, you’re also supporting local farmers and reducing your carbon footprint.
With sustainable practices becoming increasingly important, there’s no better time to appreciate the delicious fruits that are grown close to home. - A Celebration of Tradition: Fruit and cream are integral to many classic desserts, from the aforementioned Eton Mess to strawberries and cream – a summer essential.
By creating your own fruit and cream dishes, you’re participating in a long-standing culinary tradition that has been cherished for generations. - A Versatile Pairing: The combination of fruit and cream isn’t just limited to desserts.
It can be adapted for breakfast, brunch, or even a light afternoon treat.
Take strawberry and cream waffles, for example, they’re perfect for a leisurely weekend breakfast, enjoyed with a cup of tea or coffee on a sunny morning.
Recipe Highlight: Strawberry and Cream Waffles
There’s no better way to make the most of the season than with a stack of home-made strawberry and cream waffles.
The golden, crispy waffles provide the perfect base for a generous helping of freshly sliced strawberries, while a dollop of whipped cream adds a luxurious finish.
This recipe is not only simple but also incredibly versatile. You can swap out strawberries for other seasonal fruits like raspberries, blueberries, or blackberries, or even combine them for a mixed berry medley.
The waffles themselves can be flavoured with a hint of vanilla or lemon zest to complement the fruit.
Whatever your choice, the result is sure to be a delicious celebration of summer.
With fresh fruit at its peak and the tradition of cream ever-present, there’s no better excuse to treat yourself to dishes that are as indulgent as they are seasonal.
So gather your ingredients, fire up the waffle iron, and let the flavours of summer take centre stage.

Our waffles turned out perfectly and packed with fruity flavours. Great for a summer’s treat.
My children couldn’t get enough of them and they were gone in a matter of minutes with requests for a re-match!
They’re wonderfully versatile too. Why not try them with some vanilla ice cream or a fruity sorbet.
They’re a great pairing for sunny days. Enjoy.
